Slow Cooker Chinese Chicken Curry
An easy slow cooker Chinese chicken curry recipe, using mild curry powder, fenugreek and soy sauce. Dump the ingredients in the slow cooker and leave on low for 6 hours. This one is mild enough for kids.
SLOW COOKER CHINESE CHICKEN CURRY
This Slow Cooker Chinese Chicken Curry was really delicious. It's not too hot, so the kids could to enjoy it, and I could leave it going in the slow cooker all afternoon, filling my house with a yummy smell.
I served it with some basmati rice and poppadum's.
HOW TO MAKE SLOW COOKER CHINESE CHICKEN CURRY
Firstly make up 300ml of chicken stock. Make sure it's low salt because you will be adding soy sauce in a minute.
Next, whisk in the soy sauce, fenugreek and curry powder. We use mild curry powder as that's what the kids prefer. If you like things a little spicier then use hot curry powder.
Cut your chicken into large bite size chunks, then toss with the cornflour. This will help thicken the sauce as it cooks.
Place your chopped onion and garlic in the bottom of the slow cooker basin.
Then place the chicken on top and give it a stir.
Pour over the curry sauce, pop on the lid and cook on low for about 6 hours.
Serve with rice, poppadoms with mango chutney. The curry will keep in the fridge for a few days, just make sure you reheat it thoroughly in the microwave before serving.
TOP TIPS FOR MAKING THE SLOW COOKER CHINESE CHICKEN CURRY
- This recipe can be doubled if you are feeding a crowd. You will need a large 6 litre slow cooker to cook the curry in.
- The cooked curry can be frozen for up to 3 months. Defrost thoroughly before reheating in a microwave.
- Make it hot by using hot curry powder. You could even add a chopped red chilli at the same time as the onion and garlic.
- Add some veggies to the curry. Chopped red and yellow peppers would work well and add a bit of colour.

Ingredients:
- 2 Onions, chopped
- 2 Garlic Cloves, chopped
- 2 TBSP Curry Powder
- 1 TBSP Fenugreek
- 2 TSP Light Brown Sugar
- 300ml Low Salt Chicken Stock
- 1 TBSP Soy Sauce
- 5 Skinless Chicken Breasts, cut into chunks
- 3 TBSP Cornflour
Instructions:
- In a jug whisk together the stock, soy sauce, sugar, fenugreek and curry powder
- Toss the chicken pieces in the cornflour and lay in the bottom of the slow cooker along with the onion and garlic, pour over the curry sauce, and cook on low for 6 hours.
- Season and serve with rice
