Saucy Sausage Pasta
The recipe can easily be doubled making it perfect for a larger gathering (i.e school friends round for tea). I've used penne pasta here but any shape would work, you could even turn it into a pasta base by popping it in the oven to brown with some breadcrumbs and parmesan on top.
TOP TIPS FOR MAKING THE SAUCY SAUSAGE PASTA
- Add some veggies - courgettes and peppers would work well. Just fry them at the same time as the onions.
- Double the recipe and freeze half of the sauce for another day.
- If you like it hot, add a chopped fresh red chilli when you fry the onion in addition to the dried chilli powder.

SAUCY SAUSAGE PASTA
Saucy Sausage Pasta

A creamy tomato and sausage pasta sauce recipe.
ingredients:
- 1 Onion, chopped
- 2 Garlic Cloves, chopped
- 1/2 TSP Dried Chilli Powder
- 6 Sausages, each cut into 4 -5 pieces
- 1 Jar of Passata (about 400g)
- 1 TSP Sugar
- 150ml Double Cream
- 100g Grated Cheddar
- 400g Penne Pasta
- Parsley to serve
instructions:
- Cook the pasta according to instructions. Drain and set aside.
- Meanwhile fry the onion, garlic and chilli powder for 5 minutes until soft.
- Turn up the heat and add the sausages and continue to fry until cooked through.
- Add the passata, sugar and double cream and simmer for 15 minutes. Add the grated cheddar and stir to melt before stirring through the cooked pasta. Serve with the parsley.
