Easy Ratatouille
An easy ratatouille recipe (oven baked) with red onion, garlic, tomatoes, courgettes, aubergines and peppers. Perfect with pasta or grilled chicken. Why not enjoy al fresco with a chilled glass of white wine?
EASY OVEN BAKED RATATOUILLE
Look how colourful it is! This tasty oven baked vegetable dish is summer on a plate. The cherry tomatoes blister in the oven and create a wonderfully rich tomato sauce in which the other vegetables nestle.
Oven baking the vegetables retains their vibrant colour, more so than if you fried or stewed them. It also means you don't have to be standing over the hob stirring constantly.
WHAT IS RATATOUILLE?
The vegetable dish consisting of onions, courgettes, aubergines, tomatoes and peppers originates in southern France.
Traditionally, the vegetables are fried or stewed in oil, but this ratatouille recipe oven bakes them instead. Herbs commonly used to flavour the dish are basil and thyme.

STEP BY STEP EASY RATATOUILLE
Step 1: Wash your veggies ready for cooking. Peel the red onion ready for slicing.
Step 2: Chop up the courgette, aubergine and pepper into equal size pieces. Thinly slice the red onion and leave the garlic clove in its skin.
Step 3: Place in the oven, and bake for 20 minutes. After this time, add the cherry tomatoes and place back in the oven.
Step 4: Once the tomatoes have started to soften and make a sauce (roughly 10-15 minutes), take the ratatouille out of the oven. Scatter over some basil leaves, squeeze the garlic out of it's skin (and mix in), and season with salt and pepper. Leave to cool if not using immediately.
Step 5: Serve the ratatouille with your favourite grilled fish and meat. Alternatively stir through some cooked pasta. It makes a lovely summery lunch.
TOP TIPS FOR MAKING THIS EASY RATATOUILLE
You could add other veggies to the roasting tray. How about some cubed butternut squash or sweet potato. Not authentic but it would taste great.
If you have some, add a few tablespoons of red wine vinegar when you add the cherry tomatoes. It really helps to bring out their flavour.
Season with plenty of salt and pepper.
This classic ratatouille dish would go really well with my Sweet Potato and Blue Cheese Dauphinoise recipe. It's very creamy and indulgent but so worth the effort.

Easy Ratatouille

An easy ratatouille recipe (oven baked) with tomatoes, courgettes, aubergines, red onion and garlic. Perfect with pasta or grilled fish and chicken.
Ingredients:
- 1 TBSP Olive Oil
- 1 Red Onion, sliced
- 2 Garlic Cloves, leave in skin
- 1 Courgette, chopped
- 1 Aubergine, chopped
- 1 Red Pepper, chopped
- 200g Cherry Tomatoes
- Handful of Basil Leaves
- Salt and Pepper
Instructions:
- Preheat the oven to 200°c (180°fan).
- Place the red onion, garlic cloves, courgette, aubergine and red pepper in a large roasting tray. Oven bake for 20 minutes.
- Take out of the oven and scatter over the cherry tomatoes. Oven bake for a further 10-15 minutes, until tomatoes are soft.
- Mix the ratatouille with a wooden spoon and then squeeze out the garlic (which should now be soft) on to the vegetables. Give it a final mix.
- Serve with basil leaves and season with salt and pepper. It tastes really good stirred through cooked pasta for a quick and healthy vegetarian main meal.

This is such a colourful, healthy and flavourful dish. It's great that it's nice and easy to make. Perfect as an addition to pasta.

ReplyDeleteWe often make ratatouille and freeze the extra. Very useful when we're in a rush on a weeknight. I must remember to put more fresh basil in mine though.
